The Recipes I Promised

I promised a couple recipes from my last post. So here ya go, two easy-peasy recipes for you to try out. 
 I almost always end up doing an appetizer theme for small get togethers - they are fun, easy to whip up, and pretty to arrange on various platters and serving-ware. 

1. Jalapeno Poppers

I think my husband loves these more than he loves me. 
And he's only tried the reduced fat, 'healthier' version! Ha. Ha. Wait...am I insulting myself?

What you need...
Fresh Jalapenos
Reduced Fat Cream Cheese
Turkey or Vegetarian Bacon

1. Cut jalapenos lengthwise and seed
2. Stuff desired amount of cream cheese in each half
3. Wrap with bacon or just place a small slice on top
4. Bake at 375 degrees for around 25 minutes


Caramel-filled Cupcakes 

This is the story about how this (unhealthy) 'recipe' was born...
A few weeks ago I was making cupcakes for a BBQ and I didn't bake them long enough. When I went to frost them (after the oven was completely cool and people were going to arrive in 15 minutes), the middles were not baked at all- pure batter. How did I not notice this when taking them out of the oven?! In a panic mode, I spooned out the middles... and sat staring at the stupid cupcakes.  I rummaged through the fridge, grabbed caramel sauce, and just dumped it in the empty middles.
Long story short, everyone was enjoyed these cupcakes...like...A LOT! A friend that was  at the BBQ even asked me to make them again for her party. I'd say it's a pretty good mistake!

What you need:
Cupcake mix or recipe (I admit it, I used a box mix!)
Caramel Sauce
Frosting

1. Bake Cupcakes according to directions
2. Spoon out a teeny tiny bit of the middle
3. Poor in caramel sauce
4. Frost


 Really? Did I just write a recipe for that?

Well there you are...two of the easiest recipes that you didn't need recipes for because you  probably could have figured out on your own.

What a great way to come up with a new cupcake recipe!! ;) You are quite clever for thinking to scoop the uncooked cupcake out and replace it with caramel. I probably would've just told them to eat it! ( i like to eat the "unhealthy" batter so naturally I would think they do too!)

I have made those jalapeno poppers for parties--they are always a hit.

I have also used flavored cream cheese or mixed with shredded cheese as the filling too. They have all been loved.

The turkey bacon would be new for me--I definitely want to try that!

I confess too: I use cake mix too but I like to add a twist to it.. So it's not just a plain cake mix recipe! ;)

you are so clever, scraping out the insides of the cupcakes. Cake mix in Egypt is like 5 dollars for a box, so I always make my own from scratch. Cupcakes are very popular.
