Goat Cheese Stuffed Dates

I'm always looking for new appetizer recipes for entertaining- something besides little smokies and chips and dip.  And not that everything on the menu has to be healthy, but I like to have a few 'good for you' apps out on the table. Don't get me wrong, this isn't the lowest calorie snack out there but it is full of fiber, protein, iron, and pottassium. Sure beats chips and dip! (Makes 8 servings)  

What you need:
4 oz. goat cheese
1 small clove of garlic, finely chopped
2 tsp. salt
16 dried dates, pits removed and cut in half


1. Crumble goat cheese in bowl.

2. Add garlic, parsley, and salt and blend with fork.


3. Spoon 1 tsp. of cheese mixture into each date halve.  (Note: I found it helpful to cut the end flat so they stand on their own)



4. Garnish with a tiny piece of parsley if you wish.  




2 pieces=  88 calories, 1 gram fiber, 3 grams protein
